The weather has been simply beautiful and has spoiled us thoroughly. The birds are out singing as if it is spring and a new calf decided to make its way into the world this week. Strange happenings for January, but I will take them all the same, thank you very much. It is nice to have a small preview of what is in store for us, which will come sooner than we think. For now though, there are still many deep winter activities to complete like mountains of school work, hours of fiddle practice and snuggling in with a good book and a warm blanket before the rush of spring.
I’m still finding all kinds of great winter recipes that I’m trying like this easy one that goes in to your slow cooker. It’s called Crock Pot Chicken and Stuffing. You put 3 or 4 large chicken breasts in the bottom of your crock pot. Mix up a can of cream of chicken or mushroom soup, 8 oz. of sour cream, one 6 oz package of stuffing and about a third of a cup of water and put the mixture over the chicken breasts. Add 16 oz. of frozen green beans on one side of the crock pot or over the stuffing. It’s good to mix the stuffing every once in a while so I just mix the beans in, but you could keep them to one side to try to keep them separate. Add maybe another ¼ cup of water during the cooking process as needed. It will depend on your crock pot as to how much water you need. If it seems too moist, just leave the lid off during the last 30 minutes of cooking. You can add ground or diced sausage, onions, and/or celery to the stuffing mix too if you’d like. Make up some buttery mashed potatoes when its ready and you’ve got some incredible comfort food on a cold night!
I just love these yummy and simple recipes when it seems you don’t have time to turn around, which is how it’s been lately. Funny what life throws at you and all you can manage to do is put one foot in front of the other, count your blessings and pray. Grace abounds each morning with the sun rise, no matter how dark the night is, and peace comes in the promises God gives each of us.
